If you like nuts and the combination of nuts and caramel, then this is the right thing for you. A cluster of toasted almonds, walnuts and hazelnuts in buttery-sweet caramel with a hint of vanilla.

What you need

​

1 cup / 200 gr of sugar

1 stick / 100 gr of butter

1 tsp of vanilla extract

​

1 cup / 125gr almonds (skin removed)

1 cup / 125gr walnuts

1 cup / 125gr hazelnuts

​

Step by step:

​

Preheat oven to 325F / 150C. Linea baking sheet with parchment paper.

Spread the almonds, walnuts and hazelnuts on a baking sheet and toast in the oven for about 10 minutes - set aside.

​

Melt the sugar in a large pot over medium heat, stir occasionally. When the sugar melts, please watch the color and use caution. Liquid sugar gets very hot very quickly. When it burns it becomes very bitter.

​

So, when the sugar is golden brown add the butter - carefully - and vanilla extract. Turn of the stove, add the nuts and coat them with the caramel. 

​

Take 2 small spoons and set clusters on the baking sheet. Let cool completely.
