These cookies are for all people who like nuts and cinnamon - who doesn't, though. They are easy to make and quick to disappear.

What you need
​
2.5 cups / 350 gr of flour
15 tbl spoons / 200 gr of butter
1 tsp of vanilla extract
1/4 tsp baking soda
3/4 of a cup / 140 gr sugar
2 eggs
1 pinch of salt

for coating:
​
2 tbl spoons of sugar
2 tbl spoons of cinnamon
​
Step by step:
​
Beat sugar and butter in a bowl until light and fluffy - about 10 minutes.
In the meanwhile mix flour, baking soda and salt in a separate bowl.
Add the eggs and vanilla extract to the butter sugar mix - keep mixing. Add the flour mixture one spoon at a time and mix until combined.

Cover the bowl with cling wrap and place the cookie dough fridge. Let it chill for about 30 minutes

Preheat the oven to 325 F (convection) / 165 C (convection). Line 2 baking sheets with parchment paper. Mix sugar and cinnamon in a deep bowl.
​
Take a large spoon and form walnut size balls. Roll them in the cinnamon-sugar mix and set them on the baking sheet - about 2 inches apart. Bake for 10 - 12 minutes until golden brown.
​
Let them cool a little bit on the baking sheet, then place them on a cooling rack and let cool completely.
