Homemade pretzel rolls

These delicious cookies are ready in about 30 minutes. Full of chocolate with cocoa in the dough and white and milk chocolate chips baked in along with heath bar crunch.

They go so well with a glass of milk or vanilla ice-cream.

​

To make about 12 cookies:

​

1 stick (120gr) softened butter

1/2 cup light brown sugar,
 

Sometimes I use sugar in the raw instead of brown sugar. It adds a little extra crunch and depth of flavor.

​

1/2 cup white sugar

​

1 egg

​

1 1/2 t-spoon vanilla extract

​

1/2 t-spoon baking soda

​

1 cup + 2 tbl-spoon all purpose flour (ca. 150 gr).

​

1/3 cup of unsweetened cocoa powder

​

1/2 a cup (or more) of white chocolate chips

​

1/2 cup (or more) of milk chocolate chips

​

1/2 (or more) of heath bar crumbles

​

You can fill your cookies with white, milk, semi-sweet chocolate chips. Add more as you like. There are no rules. It is chocolate after all!

Making the cookies:

​

Preheat the oven to 350F

​

Beat the butter for about one minute in a mixing bowl. I use my KitchenAid for this. 

Add both sugars and beat until well combined. While you beat add the egg and vanilla extract to the butter-sugar mixture.

In a separate bowl mix together the flour, cocoa powder and baking soda. Add a little at a time to the mixing bowl. You do not want to add everything at once. Mix in on low speed. You do not want to have a flower-cocoa dusting all over your kitchen.

Now it is time to add the chocolate chips to the dough. Add them to the dough and mix until combined.

​

Line a baking sheet with parchment paper. 

​

Either take about 2 tbl-spoons of dough, shape a ball and place it on the sheet, or use an ice-cream scoop to form the cookies. Set them about 2 inches apart from each other on the baking tray. 

​

Put the tray in the oven and bake for about 14 - 15 minutes.

​

Do not overbake them. They will come out soft, but harden once they cool down.

I made these cookies several times already. They are delicious. I had them with cocoa powder and without. I had a lot of chocolate chips and not so much. Some came out really flat and some looked rather fat. They all had one thing in common - they are delicious.
