Frittata is an easy to make dinner that can also serve as breakfast and lunch. Eggs take over the main part and are accompanied by a variety of supporters.

 

In this particular recipe ham & goat cheese add to it. Frittata is very versatile. You can add a variety of ingredients to it to make it more interesting. For more color add some asparagus & peas. I found bags of "protein" vegetables in the freezer isle of my favorite grocery store, you can add those, as well.

If you like Italian ham like prosciutto top the frittata with it, once you pulled it out of the oven.

 

You see, there are plenty of options and it only bakes for about 45 - 50. With a prep time of only 10 minutes, it will make your evenings easy without putting too much effort into dinner preparation.

This frittata is without any carbs and perfect for #lowcarb or #keto.

​

What you need:

​

12 eggs

7 oz / 200 gr ham

6 - 8 oz / 200 gr goat cheese

1/4 t-spoon salt

1/4 t-spoon pepper

1/4 t-spoon paprika

​

The following ingredients are optional:

​

1 cup of cauliflower

1 bag of frozen protein vegetables

5 stems of asparagus cut into pieces

3 - 4 prosciutto slices (add at the very end)

1 cup of peas

​

How to prepare:

​

Preheat the oven to 375F / 180C. Spray a skillet with cooking spray.

​

Cut the ham into bite size pieces. Crumble the goat cheese into a small bowl. Crack all 12 eggs into a large bowl and whisk for about 2 minutes until airy. Season with salt, pepper and paprika.

​

Add ham, goat cheese and any additions you want to add. 

​

Pour into your skillet and bake for about 45 - 50 minutes. The frittata will rise and develop light golden color. Take it out and let cool for 5 minutes. If you want to add some prosciutto, add it now.

​

This dish is about 4 servings. Great for breakfast or lunch, as well.

​
