These cookies are soft and melt away in your mouth. Revealing delicious vanilla, toasted macadamia nut, and white chocolate flavor.

What you need to make about 30 cookies

2 sticks / 230 gr of butter
1/2 cups / 70 gr of powdered sugar
2 tsp of vanilla extract
1/2 tsp of salt
2 cups / 280 gr of all purpose flour
3/4 cup / about 120 gr of Macadamia nuts (toasted)
1/2 cup of white chocolate

more powdered sugar

Step by step:
​
Preheat the oven to 300 F / 150 C and toast the macadamia nuts for about 10 minutes. Let cool, then pulse in the food processor until fine. Chop the white chocolate. I used white chocolate morsels and gave them a few pulses in the food processor.

Increase the oven temperature to 350 F / 185 C. Line 2 baking sheets with parchment paper.
​
Beat butter, powdered sugar and vanilla until fluffy. Mix flour and salt add one spoon at a time to the butter. Mix until combined. Add the nuts and white chocolate to the batter.

Let the dough rest for about 30 minutes in the fridge.
​
Using a table spoon take some dough and shape into a walnut size ball. I use a small ice cream scoop.
Set the dough ball about 1 inch apart on the baking sheet. Bake for about 12 minutes. Only the edges should be slightly brown.

Let the cookies cool then dust with powdered sugar.
