I used to live in Nuremberg, Bavaria for about 9 years. I love the summers there. It is warm but not humid. Live happens outside all the times. Whether it is a BBQ  with bratwurst, steak and chicken, or  in the beer-gardens.

Pretzel's, good beer and Bayerische Gemuetlichkeit (Bavarian Coziness) are never far. - Although, and everyone that lives in Nuremberg will confirm, Nuremberg is not Bavaria. It is Franconia - a region in Bavaria and beyond. 

​

One of the things you will find in almost every beer-garden is Obazda. A cheese spread made with camembert, cream cheese, butter, and paprika, garnished with radishes and chives.

​

It goes really well with pretzels - see my recipe for pretzel rolls - and beer.

What you need:

​

7oz / 200 gr soft Camembert (mild or strong)

3.5 oz / 100 gr cream cheese

3 - 4 tbl spoons butter

1 t-spoon paprika

salt & pepper to taste

How to prepare:

​

All ingredients should be at room temperature. This will make it easier to combine them. 

Put all cheeses, butter and paprika in a bowl and mix with a  fork until well combined. Season with salt and pepper to taste.

​

Spread the cheese spread on a pretzel bun, garnish with radish slices and chives (optional).

​

This will keep for about a  week in the fridge. Once it was in the fridge, let it come back to room temperature.
