Although I have made the truffled cauliflower mash, I never took any pictures. So, please excuse the ones that are on here. I will update them shortly.

This is a wonderful replacement for mashed potatoes. Steamed cauliflower with olive oil, butter, salt and truffle spread. This is gone in no-time and you keep craving for more.

What you need:
​
1 cauliflower
2 tbl-spoons olive oil
2 tbl-spoons butter
2 tbl-spoons truffle spread
2 t-spoons salt
1/2 cup of parmesan
About 3/4 - 1 cup of water

How to prepare:
​
Cut the cauliflower into chunks. They do not have to be bite-size, as they will be mashed in a food processor.

Fill a pot that can hold the cauliflower about 1 inch with water. It does not have to be more. You rather want to steam the cauliflower than boil in hot water. Your cauliflower will be too wet otherwise.
​
Steam the cauliflower for about 8 minutes, put in a strainer placed in your sink and let sit for about 3 minutes. Lit it drip and steam off a little bit.
​
Put the cauliflower in your food processer, add olive oil and butter. Pulse 3-4 times. Add the parmesan and salt, pulse again. I add the truffle spread at the end. I like to see the truffle pieces. Pulse again until it reaches your desired consistency.

You won't believe the amazing smell coming off from the cauliflower mash. But wait until you taste it. It is delicious.
