A meringue based crunchy cookie with walnuts and cinnamon.

​

What you need to make about 45  - 50 cookies

​

1 + 3/4 cups / 200 gr of walnuts

4 egg whites

3/4 cup / 180 gr of sugar

1 tbsp corn starch

pinch of cinnamon

​

half or quarter walnut pieces for topping

​

Step by step:

​

Roughly chop the walnuts in a food processor. Line 2 baking sheets with parchment paper. Preheat the oven to 300 F / 150 C.

​

In a mixing bowl beat the egg whites until stiff. While still beating gradually add the sugar to the egg whites. Mix the walnuts with the cinnamon and cornstarch.

​

With either two tea spoons or a small ice cream scoop set little meringue dollops on a baking sheet. Bake for 35 - 40 minutes on the second rack from the bottom. Let cool on the baking sheet. Place on a cooling rack to let cool completely
