This is a really easy yet delicious recipe for apricots filled with an almond, wrapped in marzipan and coated with white chocolate.

One of my favorites. It only takes about 20 minutes to make.

What you need for 12

​

12 dried apricots

12 blanched almonds - skin removed

8 oz / 200 gr of marzipan

8 oz / 200 gr of white chocolate

If you can only get raw almonds with the skin on, here is a trick how to remove it. Put your almonds in a small bowl, bring about 1.5 cups of water to a boil. Pour the water over the almonds and let sit for 3 - 5 minutes. While still slightly hot - caution - do not burn yourself - you can easily skin the almonds.

Stuff one almond per apricot into the slit where the pit used to be. Slightly dust your kitchen counter with powdered sugar and roll out the marzipan. You can also do it between some cling wrap. Cut the marzipan slightly bigger than the apricot and tightly wrap around the apricot. You can squeeze everything a little bit.

Don't worry if the marzipan breaks a little bit. You will cover it up with white chocolate.

Melt the white chocolate in a double boiler. Dunk the apricots in the white chocolate until completely coated. Set on parchment or wax paper and let the chocolate set.
